More people are choosing vegetarian or vegan diets, especially in the US and Europe, according to data from the World Economic Forum. Great Green Health reports that around 7-8% of people under 50 are vegetarian, and searches for "vegan food near me" are increasing dramatically.

"If you're looking for a plant-based food that is high in protein and can really fill you up, lentils are the perfect option. They're nutrient-dense and are an excellent choice for both vegans and vegetarians," a spokesperson for Lotus Ministry Trust says.

The guide briefly touches on the full range of lentil varieties, but focuses primarily on red and green lentils since people consume these types most often. The guide explains that red lentils are usually ready in 15-20 minutes; they break apart during cooking, which makes them suitable for soups, stews, and purees, and they can also be used as a natural thickener.

In contrast, green lentils work well in salads, side dishes, and any dish where the lentils need to stay intact because they hold their shape better than red lentils, and add more texture to dishes.

The guide points out that both varieties have strong nutritional benefits - one cup of each type contains about 18 grams of protein and 15 grams of fiber, which is around 60% of the average daily fiber requirements.

The guide also shares a range of recipes for readers to try, such as coconut red lentil dahl, red lentil and sweet potato curry, and green lentil salad - each showing how versatile both lentil types can be.
