The head chef at Delice & Sarrasin, Yvette Caron, appreciates that today, some 16 million US adults have food allergies and that many more have food sensitives and dietary preferences. As such, she is committed to respecting the dietary needs of her diners with her new low-allergen menu.
While high-end upscale fine dining is often associated with inflexible chefs who prioritize artistry over the experience of their diners, Caron seeks to be different. With her menu, she believes she can give diners following all types of diets a gourmet French experience they can enjoy safely.
Dishes diners with sesame, nut, soy, and/or gluten-free allergies or intolerances can enjoy include the bistro’s vegan Boeuf Bourguignon, which features in-house artisan-made slow-cooked plant-based 'beef' in a rich spiced red wine sauce with caramelized onions, carrots and fingerling potatoes. Also popular - and sesame, nut, soy, and gluten-free - is their plant-based take on the French classic Coq au Vin, which has homemade vegan ‘chicken legs' braised in red wine with real Parisian mushrooms, onions, spices, and herbs from Provence in the South of France.

Diners will also appreciate that the restaurant’s menu is clearly coded so that diners know which dishes are allergen-free. Yvette Caron and her team can also modify dishes where possible to accommodate other allergies and sensitives.
