Meat is back, after years of industry focus on vegan and vegetarian dining, according to market watchers at lifestyle magazine Sunset. Economic fluctuations and changing customer priorities pushed vegan restaurants to close their doors at a 25% higher rate than other restaurants nationwide since 2020. Trends in New England seem to support this theory, with vegan Boston eateries like Double Zero and The Grasshopper shutting down recently.
However, this shift in popularity doesn't mean customers are abandoning their convictions about restaurant ethics. Diners continue to ask for humanely-raised meat and locally-sourced produce, and do so in increasing frequency, according to Sunset. Post 1917 Lexington sources its steaks from Brandt Beef, a family-owned, CARE Certified California ranch. Brandt Beef grows its own feed, maintains stringent animal husbandry standards, and abstains from the use of antibiotics and beta-agonists.
With an extensive history working in steakhouses, Post 1917 head chef and owner Jason Carron says he is dedicated to using high-quality ingredients. A former Chef and Partner at Fleming Prime Steakhouse & Wine Bar in Boston, Carron has the expertise to innovate in ways that are aesthetically and gustatorily pleasing. Current offerings include a 10-ounce Filet, 16-ounce Prime New York Strip, 16-ounce Prime Ribeye, 22-ounce Prime Bone-In Ribeye, and 32-ounce Long Bone. The steakhouse operates with a focused menu that allows staff to provide personalized service to diners.
Customers say they appreciate the classic steakhouse's big-city feel and its focus on quality over trends.
"The appetizers, entrees, and desserts were artfully prepared and delicious," one diner said. "This restaurant never disappoints.”
Carron opened Post 1917 in spring 2024. After spending 20 years working with restaurants across New England, he brings this experience to his own establishment, where he focuses on quality ingredients and precise preparation methods.
