-- Kochere Coffee Company has named a honey-processed microlot from Honduras as its August Coffee of the Month, spotlighting an origin that has been steadily moving from commodity-grade exports toward Q-graded, specialty-focused microlots. The selection comes from Finca Liquidambar, grown by Roberto Rene Gonzalez in Guascotoro, San Jose, La Paz, Honduras.
The farm sits at 1,510 meters above sea level in clay-mineral soil and grows Bourbon, Catuai and Pacas varietals. Pacas is native to Honduras, a natural mutation of Bourbon first identified in the country in the 1930s. The lot is processed using the pulped natural, or "honey," method: cherries are pulped and dried with some or all of the mucilage still on the parchment, inside solar dryers that shield the coffee from rain while still allowing controlled drying. The result sits between washed and natural processing -- more sweetness and body than a washed coffee, more clarity than a natural. The lot is Organic certified, scored 80-plus by Q Graders, and roasted medium, with cupping notes of brown sugar, nectarine, peach and toasted coconut.
Each month, Kochere's Safari "Coffee of the Month" Club ships a different single-origin destination to subscribers, sourced direct from smallholder farms and cooperatives and roasted to order within one to two days of shipping rather than pulled from a static blend on a warehouse shelf. Kochere was founded in 2022 by a team with virtually no prior experience in specialty coffee, built instead around direct relationships with growers and a rotating, subscription-based model meant to introduce drinkers to origins and processing methods they might not otherwise encounter.
According to Kochere's founding team, the company's approach centers on staying connected with customers through monthly Safari Club shipments, roast-to-order freshness updates, and behind-the-scenes stories from the farmers behind each origin.
