Pearl Pardee, Master Chef and owner of the award-winning Thai Spices Natural Restaurant in West Sedona will open a second restaurant, Fresh & Natural Thai Kitchen later this year. The restaurant will feature fresh, quality food housed in a beautiful, green-designed space.
Fresh & Natural Thai Kitchen will offer all the favorite healthfully prepared Thai food that locals and travelers from around the globe alike, have loved for more than two decades, plus new, exciting recipes that Master Chef Pardee has recently created.
“The menu will feature healthy Thai favorites along with many new recipes I’ve been working on. We’ll have organic substitutes for sugar like palm sugar and maple syrup. The food will have no MSG and no corn syrup. We’ll also have many gluten-free options. As always, you can ask for something to be prepared vegan,” says Pardee.
Located across from Whole Foods on 89A, Fresh & Natural Thai Kitchen will feature counter service. Patrons will order their food at the front counter where multiple digital screens will display menu items, specials, cooking information and local photos. After ordering, customers receive a number to place on their table while they await their food. Carry out service will also be available.
This new location which has been in the planning stages for several years makes use of some of the latest green technologies. The restaurant boasts passive sunlight heating, solar panels, rainwater harvesting and Insulated Concrete Form (ICF) construction. The building takes in the southeastern morning sun to maximize heat efficiency. The restaurant has been built atop a ravine so water runoff from the mountains flows beneath it. A system of natural drainage was engineered to slow the flow of water and reroute it. It was also necessary to obtain a no rise certificate for the space. The new Fresh & Natural Thai Kitchen resolves a potential flood situation while optimizing the use of the property.
The restaurant seats a total of 50 guests with its indoor and outdoor seating. It has a glass storefront that faces north showcasing gorgeous, sweeping views of Chimney and Coffee Pot rocks. The interior will feature a high ceiling of tongue and groove pine and exposed blue lamps. The floor is stained concrete designed to match the mountains in red and limestone colors. The outdoor patio is adorned with water features and will be landscaped to create a natural, organic feel.
Pardee has long been a proponent of macrobiotic food and a healthy lifestyle, tending to her own gardens and fruit trees. She received her training in traditional Thai cuisine from the chef of the royal family of Thailand. Her first restaurant in Sedona, Thai Spices Natural Restaurant, has been in business for 25 years and has been awarded the “Best Thai Food in Sedona” 15 times.
