Chef Michael Rolchigo, a Culinary Institute of America graduate ,with degrees in both Culinary and Pastry Arts, decides to step away from over 35 years in the restaurant business to pursue another one of his passions, bottling his Hot Sauce creations. Chef Mike was always a hot sauce fan, but like in his cooking, it was all about the flavor and flavor combinations. Now with the same concept he incorporates this into his sauces with just the right amount of heat. About two years ago he started to formulate sauces that would be great to pair with foods.
The first of three sauces he just launched is the VESUVIUS, the first “Italian Sriracha Sauce”. It is a blend of Red Serrano and Calabrian peppers with herbs of Oregano, basil, Marjoram and Rosemary and of course fresh garlic and onions. It’s phenomenal on pizza, pasta, meatballs, or any Italian favorite dish to take your Fra Diablo experience to a whole new level.
The second sauce is the BLOODY MARY Seafood Sriracha Sauce, a combination of Cayenne and Arbol peppers, tomato, horseradish, celery, lemon, and herbs. It’s spectacular on shrimp cocktail, raw oysters, fried seafood, or even your own Bloody Mary Cocktail.
The third sauce is the Burning Bandido Mexican Sriracha Sauce, made with Red Serrano and Chipolte peppers to add a little smokey flavor, with the addition of cilantro, white onion, cumin and lime. Your tacos, enchiladas, quesadillas, rice or any Mexican or Spanish style cuisine will explode with flavor.
